It's hard to say enough good things about Peter Reinhart's "Artisan Breads Every Day". If you only buy one bread book then this is the one to buy. From levains to breads to incredible pastries everything is presented in an easy to understand, colorful, and engaging way.
"52 Loaves" by Bill Alexander is not a "bread book" but a book about bread. At the same time it is loaded with background and good to know facts and history. A fun AND helpful read.
